Cait's Sausage Kale Soup

  1. Dice vegtables
  2. 1 yellow onion diced
    2 cloves garlic minced
    1 lb carrots, peeled and coined
  3. Brown sweet italian suasage in a dutch oven (or pot) on medium high heat with olive oil.
  4. 1 package (1-1.5 lbs sweet Italian sausage, removed from casing; break up)
  5. Add onion and garlic to pot with sausage and cook 3-4 mins
  6. 1 yellow onion diced
    2 cloves garlic minced
  7. Add Chicken broth, carrots, beans, and seasoning to Dutch Oven (or regular pot)
  8. 2 48 oz cans chicken broth (or fill with 96 oz water and 10-12 bouillion cubes)
    1 lb carrots, peeled and coined
    1 can white cannellini beans
    salt & pepper to taste
  9. Cook noodle or rice separately (optional)
  10. Noodles or Rice cooked separately (optional)
  11. Cook soup until carrots are softened to your liking. Optionally, add carrots after soup has cooked and reduced a bit.
  12. Add kale and cook until bright green (5-10 mins)
  13. 1 bag of kale
