Pancakes
Double recipe for plenty of pancakes. They freeze well.
1 ½ cups milk
4 tablespoons white vinegar
2 cups all-purpose flour
¼ cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
2 eggs
4 tablespoons butter, melted
½ teaspoon vanilla
- Combine milk with vinegar in a large bowl and set aside for 5 minutes to "sour".

- Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl.
2 cups all-purpose flour
¼ cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
¼ teaspoon salt
- Whisk egg, butter and vanilla into "soured" milk.

½ teaspoon vanilla
4 tablespoons butter, melted
- Pour the flour mixture into the wet ingredients and whisk until lumps are gone.
